Join Apple Hill Chamber Music for an evening concert with great local food and musical harmony. The Chef features many local vegetables from the Monadnock Menus inventory.
Apple Hill Chamber Music Camp celebrated with music and local food at their recent Gala Event. Feeding Body & Soul. Apple Hill's chef created a menu with vegetables from across our region. "Most notably enjoyed were the heirloom tomato seconds which I made a “Caprese” salad with local organic basil, fresh mozzarella and balsamic vinegar dressing on a bed of local mixed and Mesclun greens."
CAPRESE SALAD:
Ingredients
3 vine-ripe tomatoes, 1/4-inch thick slices
1 pound fresh mozzarella, 1/4-inch thick slices
20 to 30 leaves (about 1 bunch) fresh basil
Extra-virgin olive oil, for drizzling
Coarse salt and pepper
Directions
Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Drizzle the salad with extra-virgin olive oil or Balsamic dressing and season with salt and pepper, to taste
