Sausage, Kale, and Lentil Soup

Ingredients
1 tablespoon extra-virgin olive oil
1 pound hot sausage, bulk or casing removed
1 onion, chopped
2 ribs celery, chopped, leafy tops reserved
1 large carrot, peeled and chopped
1 large Idaho (russet) potato, peeled and chopped into small dice
1 Fresno or Holland chile pepper, thinly sliced or finely chopped
2 sprigs fresh rosemary, leaves picked and finely chopped
2 large cloves garlic, chopped or sliced
1/2 tablespoon ground cumin
Kosher salt and freshly ground black pepper
1 bundle Tuscan, black, or dinosaur kale, stemmed and very thinly sliced
1/4 cup tomato paste
1 cup white wine
Freshly grated nutmeg
1 3/4 cups lentils
4 cups chicken stock
2 cups water

Directions
In a soup pot or large Dutch oven, heat 1 tablespoon extra-virgin olive oil. Add the sausage, breaking it into pieces, and cook until lightly brown. Add the onions, celery, carrots, potato, chile pepper, rosemary, garlic, cumin, salt, and pepper, and cook to soften, 8 to10 minutes.

Wilt in the kale, and season the kale leaves with a little freshly grated nutmeg. Stir in the tomato paste for 30 seconds, then add white wine. Cook to reduce by 1/2 and stir in the lentils, stock, and water. Bring to a boil, reduce the heat to low, and simmer the soup until the lentils are tender, about 35 minutes. Serve immediately or cool, store, and reheat. Serve with chopped celery greens, to garnish

Once there, enter your e-mail address and password. Then select Vermont and Food Works as your market. Once you have made it into the market you can shop as you would any online store. Add items to your basket and check out when you are done. You can update your orders until Friday at 3pm, when the market closes.

Once the market is closed, fresh produce will be ordered by the farmers and will arrive at the Root Cellar for delivery on Tuesday morning. When orders go out an official invoice will be sent along with the box of food. Invoices are expected to be paid within 30 days of delivery. Invoices not paid within 30 days of delivery will incur a 1% interest charge every month that they are unpaid.

Hello everyone. Hope your Turkey Day was a lovely day!

This week we will be in full swing with ordering. Buying clubs, I will be e-mailing you a spreadsheet with our inventory, that way we can make this as easy as it is intended to be. We have determined that having multiple buyers logging in to the account and ordering will get too confusing, so we will be going with the spreadsheet method. Go with what we know!!

Another important note. You will probably notice different prices on the market. These prices reflect a better understanding of our operational costs. In order for this program to survive, it is imperative that we restructure our pricing. However, do not fear. I have simultaneously increased subsidies to compensate. Those sites that are subsidized will see a similar total cost in the end. For sites that have been marked-up, there will no longer be a mark-up at the end. What you see is what it costs. I hope this makes things easier to understand for everyone. If you have any questions, feel free to call 802.223.1515 and ask for Dan or Sabrina.

Also, please try to RSVP for the Chef-Farmer Retreat as soon as possible. You should be receiving an invitation in the mail..

- Packing slips that arrive with boxes are now your invoices. These documents are to be saved and used as a current invoice. Each month, sites and buyers will receive a statement of unpaid balances, etc.

- Farm-to-Table is growing and evolving and your continued support is absolutely Vital to our program. We always welcome donations, volunteers, and support in any way, shape or form. - Finally, our CHEF-FARMER RETREAT is coming up on DEC 7, 2011 @ Trinity Church in Montpelier, VT. All are invited to attend. Formal invitations will be going out this week, with RSVP's attached. Attendance costs $25. The theme this year is "FOOD IS MEDICINE". Come learn about incorporating healing herbs into your recipes, learn how to prepare chicken stock and soup from a roasted chicken, and learn how to cook food without even cooking it!
