Recipe of the Week

Braised Cabbage and Carrots

Ingredients
1 large head (about 3 pounds) green cabbage
4 slices extra-thick bacon, cut into 1-inch squares
1 cup water
2 tablespoons Smash Seasoning, recipe follows
1 (10-ounce) bag baby carrots
Salt and freshly ground black pepper
Directions
Core cabbage and chop into 2-inch pieces. Clean thoroughly and let drain.

In a large pot over medium heat, cook bacon halfway through. Cook's Note: It will release its fat and be lightly browned, but still moist.

Add the cabbage, water and Smash Seasoning. Cover and reduce to a simmer and steam 2 hours, stirring every 15 minutes. Drain water from pot and add carrots. Cover and simmer another 15 minutes, until carrots are tender. Add salt and pepper, to taste.

Smash Seasoning:
1 teaspoon cayenne
1 teaspoon celery seed
1/2 tablespoon lemon pepper
1 tablespoon garlic powder

Mix ingredients thoroughly and keep in a tightly sealed container for up to 6 months.









To log on to Harvest to Market and place an order, start by going to http://www.harvesttomarket.com

Once there, enter your e-mail address and password. Then select Vermont and Food Works as your market. Once you have made it into the market you can shop as you would any online store. Add items to your basket and check out when you are done. You can update your orders until Friday at 3pm, when the market closes.

Once the market is closed, fresh produce will be ordered by the farmers and will arrive at the Root Cellar for delivery on Tuesday morning. When orders go out an official invoice will be sent along with the box of food. Invoices are expected to be paid within 30 days of delivery. Invoices not paid within 30 days of delivery will incur a 1% interest charge every month that they are unpaid.

We are aware that some people are still having issues accessing the website, or getting this newsletter. Some people are receiving this newsletter up to 4 times each week. We apologize for the inconvenience. Remember that this website is a work in progress. Our input is going to help make this experimental website a success. So please continue to let us know whats going on.

Also, please remember that our packing slips are our invoices, and payments are due 30 days past the date of the invoice. After that a 1% finance charge will be applied to your bill.

In other news, there are many new projects in the works here, so keep your eyes and ears posted in the community and on your e-mail to learn more about what we're doing. 2012 is going to be a big transitional year for Farm-to-Table. We are dedicated to providing access to the Best Fresh Local foods for All People. To make this happen we will be very creative with how we source our food, grow our food, and deliver our food. So again, look out for some new programs!!

And last but not least, this program would not exist if it were not for all of our awesome sites continuing to place orders and purchase our produce. Lets keep the momentum of this new year going with Farm-to-Table.

- Packing slips that arrive with boxes are now your invoices. These documents are to be saved and used as a current invoice. Each month, sites and buyers will receive a statement of unpaid balances, etc.

- If you have not registered, do not know how to register, or do not know or remember your password, please e-mail [email protected] to get that resolved.

- Farm-to-Table is growing and evolving and your continued support is absolutely Vital to our program. We always welcome donations, volunteers, and support in any way, shape or form. - As always, we work diligently to provide fresh local food products at a fair market value. This is incredible work we are all contributing to.
