Recipe of the Week

Carrot-Parsnip Soup with Parsnip Chips

Ingredients

2 tablespoons olive oil, divided
2 1/2 cups chopped yellow onion
3 cups coarsely chopped parsnip (about 1 pound)
3 cups water
2 1/2 cups coarsely chopped carrot (about 1 pound)
28 oz fat-free, less-sodium chicken broth
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup (1/8-inch-thick) slices parsnip
1 tablespoon chopped fresh chives


Directions

Heat 1 teaspoon oil in a Dutch oven over medium heat. Add the onion, and cook 10 minutes or until tender, stirring occasionally.

Add chopped parsnip, water, carrot, and broth; bring to a boil. Reduce heat, and simmer 50 minutes or until vegetables are tender.

Remove from heat; let stand 5 minutes.

Place half of carrot mixture in a blender; process until smooth. Pour pureed carrot mixture in a large bowl. Repeat procedure with remaining carrot mixture. Stir in salt and pepper.

Heat remaining 5 teaspoons oil in a small saucepan over medium-high heat. Add parsnip slices; cook 5 minutes or until lightly browned, turning occasionally. Drain on paper towels. Sprinkle parsnip chips and chives over soup.

Once there, enter your e-mail address and password. Then select Vermont and Food Works as your market. Once you have made it into the market you can shop as you would any online store. Add items to your basket and check out when you are done. You can update your orders until Friday at 3pm, when the market closes.

Once the market is closed, fresh produce will be ordered by the farmers and will arrive at the Root Cellar for delivery on Tuesday morning. When orders go out an official invoice will be sent along with the box of food. Invoices are expected to be paid within 30 days of delivery. Invoices not paid within 30 days of delivery will incur a 1% interest charge every month that they are unpaid.

Good Afternoon Farm-to-Table Participants,

WE ARE OUT OF BUTTERNUT SQUASH AND RED CABBAGE FOR THE REST OF THE SEASON!! Storage crops are dwindling and we are beginning to plan for the 2012 growing season!!

Please take the time to fill out the NOFA survey you have probably received, so that we can understand better what you'd like our farmers to grow, and how you would like the food to arrive at your institution!

Farm to Table would like to take this opportunity to welcome VT Bean Crafters to our list of fresh, local, nutritious foods! Their Bean Burgers and Humm-ish, are crafter with the finest local ingredients. They are 99% organic and local and very delicious. We will be offering their black bean burgers in 2 packs, 4 packs, and 24 packs for food service! Also, check out their Black Bean Chipotle Humm-ish.

Also, I would like to announce that we are now offering Freshly Baked Apple Pies and Cider Donuts by Champlain Orchards! Pies are 9 inches with a double crust and the donuts are offered by the half dozen or whole dozen!

I have altered the VT Smoke and Cure Sausage prices and packaging slightly. They are now only offering their local variety, which is better for us and our economy, but slightly more expensive. So, the Hot Italian Sausage is now available in a 12 oz. package for $4.00.

This week we will have 10 dozen eggs. Get em quick, before they're gone!

We have GARLIC also. White russian, $8.50/lb.

Finally, we are proud and sad to say, we have sold out on ALL of our Butternut Squash. We will no longer be offering butternut squash. (Until next fall of course.)We still have Carnival Squash, though. About 50 lbs left of that, so be sure to gobble it all up this week!

However, we are offering a (SALE) this week. GREEN CABBAGE will be offered at $1.00/lb. and CARROTS for $1.25/lb.

I repeat. SALE SALE SALE on carrots and cabbage. By em up, please!

Finally, the most important thing to add. We LOVE having you as customers. Keep buying this fresh local food from us. This next growing season is going to be an amazing one!

- Packing slips that arrive with boxes are now your invoices. These documents are to be saved and used as a current invoice. Each month, sites and buyers will receive a statement of unpaid balances, etc.

- Farm-to-Table is growing and evolving and your continued support is absolutely Vital to our program. We always welcome donations, volunteers, and support in any way, shape or form.
