Recipe of the Week

Roasted Radishes with Radish Greens

INGREDIENTS

3 bunches small radishes with greens attached
2 tablespoons extra-virgin olive oil
Salt and freshly ground pepper
2 tablespoons unsalted butter
2 tablespoons fresh lemon juice

METHOD
1. Preheat the oven to 500°. Trim the radishes and wash the greens; pat dry.

2. In a large ovenproof skillet, heat the oil until shimmering. Add the radishes, season with salt and pepper and cook over high heat, stirring occasionally, until lightly browned in spots, about 2 minutes. Transfer the skillet to the oven and roast the radishes for 15 minutes, until crisp-tender.

3. Return the skillet to the burner and stir in the butter to coat the radishes. Add the radish greens and cook over moderate heat until they are wilted, about 2 minutes. Add the lemon juice and season with salt. Serve the radishes right away.

Good Afternoon Farm-to-Table Participants,

Happy Wednesday. There are so many great things going on here in central vermont! Aside from the refrigerated truck and the wonderful produce coming out of the greenhouses and gardens of our amazing farmers, I would like to acknowledge the Waterbury Food Shelf for putting together an awesome FREE meal for those affected by the Hurricane last fall. Through Farm-to-Table, this meal was provided with 25 pounds of Spinach from Littlewood Farm and 37 dozen eggs from Dodge Farm in Berlin. I think they made a Spinach, Ham & Cheese Quiche!!! So awesome!

Ok. so this week for freshie freshie...

Littlewood Farm - Beautiful Rhubarb and Braising Mix. Braising Mix is a blend of beet greens, lettuces, mustard greens, bok choy and more. Delicious on its own, sauteed, or mixed into burritos, tacos, pizzas, etc.

Pebble Brook Farm - Amazing Mesclun, Loose Chard, Loose Beet Greens, and wonderfully bunched radishes. If you didnt get a chance to sample the radishes last week, make sure you get your hands on at least one bunch. They are great in salads, sauteed, or fried as radish chips. I have also included a recipe this week for braised radishes and radish greens.

Robin Taylor - Romaine Lettuce , Green Leaf Lettuce, ASPARAGUS, and eggs eggs eggs!

Two Rivers Center Farm - Mesclun (with mustard greens and beet greens), baby spinach, and 7 bunches of sweet baby carrots!

Kingsbury Market Garden - Spinach, Mesclun, and possibly Basil.. still awaiting confirmation on the basil!

Ok - that concludes our availability for the week. get those orders out, feed your kids and your elders with FRESH LOCAL FOODS!

And Finally, of course, the most important thing to add. We LOVE having you as customers. Keep buying this fresh local food from us. This next growing season is going to be an amazing one!

In gratitude

Daniel Stein
