We have farms with an abundance of root vegetables, particularly beets! Why not try a simple roasted root vegetable recipe?
How about this: Cut clean root vegetables (beets, carrots, kohlrabi,parsnips, onions, turnips, potatoes)add fresh herbs (rosemary, sage, thyme), salt & pepper, a few cloves of garlic toss with extra-virgin olive oil and roast in a 400 degree oven for about 45 minutes. A colorful, easy side dish!

Next week's order will be in time for Thanksgiving! Celebrate food and it's abundance with a special menu. Remember those who don't have enough and have a food drive.
Acorn squash is plentiful. Cut it in half, take the seeds out, sprinkle with your favorite seasonings, drizzle with a little maple syrup and roast in a 400 degree oven until easy to pierce with a fork. Serve it in the shell or scoop it out and whip it!
