What's the one syllable word Northeast farmers have seen enough of? R-A-I-N! Raging brooks & rivers have created crop loss and devastation throughout our area. Recent storms have reminded us of what too much of a good thing can do.
But even with all the roads closed to Keene a way was found to make our recent Wednesday delivery. Much thanks to the good people at Wesminster Organics for their perserverance and hard work.
Even with all the challenges of inclement weather our local farmers are finding a way to offer great local products, like fresh mixed cherry tomatoes, to our market. How about a tomato salad to brighten up our plates and see some sunshine!
Incredible Tomato Salad
Two important things to wow people with this salad first use local tomatoes of different colors, sizes & flavor and second, the flavor is brought out by salting the tomatoes, so don't skip this bit. If you can get hold of some dried flowering oregano then do, as it has the most heavenly flavor.
2 1/4 pounds mixed ripe tomatoes, different shapes and colors
Sea salt and freshly ground black pepper
A good pinch dried oregano
Red wine or balsamic vinegar
Extra-virgin olive oil
1 clove garlic, peeled and grated
1 fresh red chile, seeded and chopped
Slice tomatoes in half. Put the tomatoes into a colander and season with a good pinch of sea salt.
Give them a toss, season again and give a couple more tosses. The salt won't be drawn into the tomatoes; instead it will draw any excess moisture out, concentrating all the lovely flavors. Leave the tomatoes in the colander on top of a bowl to stand for around 15 minutes, then discard any juice that has come out of them.
Transfer the tomatoes to a large bowl and sprinkle over the oregano. Make a dressing using 1 part vinegar to 3 parts oil, the garlic and the chile. Drizzle the tomatoes with enough dressing to coat everything nicely.
Old Athens Farm
The Old Athens Farm is a small family run NOFA certified organic farm in Westminster, Vermont. Since 1989 Michael Collins has been dedicated to growing the highest quality produce for the local market. Our produce can currently be found at many local stores and farm stands, as well as at the Brattleboro Area Farmer’s Market and the Londonderry Farmer’s Market. Our specialty has long been early season greenhouse crops. We have developed a reputation for producing the earliest tomatoes and cucumbers year after year. When customers say, “Those tomatoes taste like real tomatoes.” I can proudly say that it is because they are real tomatoes, grown organically in rich dirt, tended with perfect care, and picked extremely ripe. Taste and freshness come first at the Old Athens Farm.
