Vanilla Information
From Frechette Family Farm, Inc.
Diving deeper into Frechette's double fold vanillia extract. Their current extracts that they are selling at the South Paris Farmers Market is made from a mix of Madagascar and Indonesian vanilla beans. Linda has a special batch made with white rum as well as the standard vodka extract.
Indonesian vanilla beans notes of cinnamon,
cream & butter. These beans are the most “common” flavor of vanilla. Extract made with these beans will give the familiar flavor bought in stores.
Madagascar vanilla beans are probably the most well-known vanilla bean. Madagascar beans have a rich, woody, clear smell that is very similar to the smell of the vanilla bought in stores, probably because Madagascar is the top producer of vanilla beans.

Vendor's Notes This Week
Petrullo Farms in South Paris, Maine, makes fresh pasta with only five ingredients, our farm fresh eggs, semolina and durum flour, salt and water! We have classics as well as some not so common styles. You can order our fresh pasta on our website or pick some up at the farmers markets, this week we will have pappardelle, creste di gallo, bucatini, and campanelle, but we also wholesale to markets and restaurants from Bethel all the way to Bath and Portland Maine!
PeaVee's Delights has been harvesting Red Long of Tropea onions that are great for grilling, Bianca Di Maggio chipollini onions and Ailsa Craig sweet onions for the market. We will also have an assortment of greens, peppers, carrots, beets, cabbage, and flowers. Come see us!
