NEW AND RETURNING PRODUCTS

Fresh Parsnips
Menu Group: Food - Section: Vegetables - Category: Parsnips
Vendor: Rasmussen Farm
Scorzonera
Menu Group: Food - Section: Vegetables - Category: Other
Vendor: Rasmussen Farm
Scorzonera looks like a slender carrot with black skin and white flesh. Some people say it tastes like oysters, but we thin it just has a nice earthy flavor. It is a good source of calcium, iron, and phosphorus. Try steaming, sauteing or roasting--but don't overcook or it will get mushy. The flavor is mild, so best not to season too much.
Jerusalem artichokes
Menu Group: Food - Section: Vegetables - Category: Other
Vendor: Rasmussen Farm
These crisp tubers look like lumpy potatoes with the texture & nutty taste of water chestnuts. They can be used like potatoes and are also yummy raw or pickled. Excellent mashed or made into soup, alone or in combination with other root veggies.

Please note that some people lack the enzyme needed to digest them and can suffer intestinal discomfort from eating them. Find recipes & photo at www.homecooking.about.com/library/archive/blv71.htm.
Bunch of 4 small leeks
