Dandelion greens
Menu Group: Food
Section: Vegetables
Category: Greens

Vendor: Rasmussen Farm

Harvested only from dandelions not yet in blossom. Field-gathered dandelion greens have a slightly bitter taste. Cooking reduces the bitterness. They can be added raw or blanched to salads or braised with a bit of olive oil, lemon & salt. Why not try dandelion green gratin? The more adventurous may wish to add bits of anchovy & hard-boiled egg--a Caesar salad variation.
Jerusalem artichokes
Menu Group: Food
Section: Vegetables
Category: Other

Vendor: Rasmussen Farm

These crisp tubers look like lumpy potatoes with the texture & nutty taste of water chestnuts. They can be used like potatoes and are also yummy raw or pickled. Excellent mashed or made into soup, alone or in combination with other root veggies.

Please note that some people lack the enzyme needed to digest them and can suffer intestinal discomfort from eating them. Find recipes & photo at http://homecooking.about.com/library/archive/blv71.htm.
