These red skinned sweet potatoes have a moist orange flesh. Wonderful baked - which is my favorite way to cook and serve - but they can also be roasted, or mashed.
May be a single large 2+ lb sweet, or several moderate sized sweets. Some broke during harvest, especially the long ones, so will have a healed scar at one end or the other, but this does not affect the cooking or flavor.
The small sweets bake up quickly and are best cooked this way - so I think!

Fingerling - Red Thumb: "As Beautiful as they are tasty. Streaks of pink in the white flesh. Bake or boil. Adds nice color to a potato salad."

Vendor: Rasmussen Farm

Harvest Moon (pictured) - purple skin, yellow flesh. Maine Potato Lady describes these as "round purple tubers with dark yellow flesh ... absolutely delicious in hot potato salad served with roasted turkey. Yum!"
