Purple Passion: 20% sweeter and more tender than green asparagus. It is a lovely deep purple but does turn green when you cook it.

Stems to peel or use for soup stock: The asparagus spears we sell are mostly just the most tender part, broken where they naturally break. This leaves plenty of stems that taste every bit as good but are less desirable and so cost less, since they lack tips and have tough skins. Peel the larger ones, and they are divine simply steamed, added to stir fries, soups, quiches, pasta dishes, you name it. Great for making asparagus broth even unpeeled.

Use both the green tops and the small bulbs, similar to scallions in appearance but larger, more sturdy, and much more flavorful - or plant them to grow your own! As plants, they will eventually form a taller stalk with edible small onions (like sets) on top. As these mature and grow top-heavy, the stalk falls over so those sets can take root nearby. So they "walk" a step with each new generation.
