We call these cucumbers the "hedgehog" cukes! They are rock hard and spiny, not at all appetizing raw. BUT the recipe is a multi-day sugar cure followed by pickling, and the process penetrates and softens the cukes. The result is a crunchy sweet and tangy pickle that is surprisingly delectable!

Green Tomato Pickle ...an old-timey Southern classic. Satisfyingly sweet and tart! One of my personal favorites. Our own Certified Organic tomatoes, sweet peppers, and onions, with sugar, vinegar, and spices.
