Vendor: Whitehill Farm

Sweet and crunchy, made of West Indian Gherkin cucumbers! We call these cucumbers the "hedgehog" cukes! They are rock hard and spiny, not at all appetizing raw. BUT the recipe is a multi-day sugar cure followed by pickling, and the process penetrates and softens the cukes. The result is a crunchy sweet and tangy pickle that is surprisingly delectable!

Our cream is perfect on toast, bagels, cookies, ice cream, eaten right out of the tub and so much more!

Refrigerate after opening. It will separate over time. If it does, just stir the maple syrup back into the creamy part again.
