Rutabagas - are Harvest of the Month for January. They are excellent mashed with a variety of vegetables - just use whatever you have on hand. Don shared his recipe using Tracie's carrots and Harlow Farm's rutabagas. This mash was enjoyed by inmates and staff alike!
Don's Rutabaga-Carrot Mash
Yield: serves about 250+
Ingredients:
50 lbs Rutabagas - Peeled,rough dice
50 lbs Carrots - cleaned
2 lbs butter
2 lbs brown sugar
Carrot stock reduced to 1 Qt
Salt & Pepper

Directions:
1. Peel and chop the rutabagas
2. Wash and snip the ends off of the carrots
3. Steam veggies until soft
4. Season as you like with salt & pepper
5. Whip and serve

Mashed Rutabaga-Parmesan
Recipe from Vermont Harvest of the Month
Yield: 4-6 servings
Ingredients:
2 small rutabagas
2 potatoes
2 Tbsp. butter
¼ cup cream
⅓ cup grated fresh parmesan
salt and pepper, to taste

Directions:
1. Peel and chop rutabagas into chunks and toss into a pot of boiling water. Cook for about 20 minutes, until easily pierced with a fork.
2. Drain, return to pot, and add butter, stirring to coat and melt.
3. Mash with a fork or potato masher.
4. Mix in cream and parmesan, and salt and pepper to taste.
