Brown Eggs: Variable size - small to extra large. Cage free. This time of year the chickens are out foraging on fresh grass. Feed is Pullen grain from Vt. - not organic. Dark yellow yolks.
Not washed - ie. bloom is left on and can be kept for a few weeks at room temperature. Wash in warm water before using and refrigerate after washing.

Pullet Eggs: Our new flock of Red Star chickens are starting to lay. Expect small eggs, rich brown color, hard shells, firm whites and dark yellow yokes. They are fed conventional grain sold by Poulin Grains of Vermont. They are cage free, and are outside foraging during the day.

Asparagus stems to peel or use for soup stock: The asparagus spears we sell are just the most tender part, broken where they naturally break. This leaves plenty of stems that taste every bit as good but are less desirable and so cost less, since they lack tips and have tough skins. Peel them, and they are divine simply steamed, added to stir fries, soups, quiches, pasta dishes, you name it. Great for making asparagus broth even unpeeled.
