Lots of nice large eggs, all different shades of brown. Our older layers are still giving us nice eggs and the new flock is now laying more actual large and nice large eggs, more large than mediums and smalls! They are all enjoying goodies: veggie scraps - coming from the House AND EXTRA greens and trimmings from cooking.
(pictured) Small and Pullet eggs! Perfect "practice" eggs from our new layers ...even some green ones! Small and Pullet eggs are minis ...three equal approximately 2 large eggs for recipe planning. Golden yolks just like eggs from our older birds ...and the new girls will be laying larger eggs soon! The new flock are Light Brahmas, a couple Auracana's, and Silver Laced Wyandottes!
For baking we use the standard measure ...hand shake thoroughly and then measure! 1 large egg is 3 ¼ tablespoons ...2 = 6 ½ tablespoons, etc!

Grown using IPM, Integrated Pest Management, starting with row cover, and using minimal pesticides when swede midge detected in the field. We had NO Broccoli the year when the midge was present and undetected. There is NO organic agent to control this pest. It has been a month since any pesticide was used on the current crop of broccoli !
