A long-time favorite at our home and with our dinner guests. Crusty free-form loaf. We start with a "sponge," similar to a sourdough starter, giving it a divine texture. Made with unbleached white flour, whole wheat bread flour, water, mixed Greek olives, homegrown rosemary, yeast, and sea salt.

Field-gathered dandelion greens have a slightly bitter taste. Cooking reduces the bitterness. They can be added raw or blanched to salads or braised with a bit of olive oil, lemon & salt. Why not try dandelion green gratin? The more adventurous may wish to add bits of anchovy & hard-boiled egg--a Caesar salad variation. Harvested only from dandelions not yet in blossom.
